Vicki brought this delicious but so simple dish to our last lunch.
Sweet Potato & Pancetta Gratin
850g sweet potato, peeled and thinly sliced
8 slices pancetta
1 cup pouring cream
1/2 cup grated parmesan
Preheat the oven to 180C.
Layer the potato, pancetta, salt and pepper in a baking dish.
Place cream in a saucepan and heat.
Pour over sweet potato and bake for 20 minutes.
Sprinke with parmesan and cook a further 10-15 minutes until sweet potato is cooked and cheese is golden.
